GREEN TOMATO SWEET PICKLE | |
7 lbs. sliced green tomatoes 2 gal. water 1 c. lime 5 lbs. sugar 3 pts. white vinegar 1 pt. water 1 tsp. whole cloves 1 tsp. ginger 1 tsp. allspice 1 tsp. mace 1 stick cinnamon Soak tomato slices overnight in 2 gallons of water to which 1 cup of lime has been added and dissolved. Drain after soaking. Wash and soak in fresh water for 4 hours, changing water every hour. Place remaining ingredients in canning kettle, putting all spices in cheese cloth bag, tie loosely. Bring to a boil, pour over drained tomatoes and let stand until next morning. Boil all for 1 hour or until clear and transparent. Pack boiling hot into sterilized jars and seal at once. |
