FRUIT PIZZA
1 pkg. Pillsbury refrigerated sugar cookie dough
3/4 c. sugar
1 tsp. vanilla
8 oz. pkg. cream cheese
A variety of fresh fruits (we use peaches, bananas, grapes, strawberries, blueberries, pineapple and kiwi)

Preheat oven to 350 degrees. Slice cookie dough in 1/2 inch rounds. Place side by side on greased ground pizza pan. Sprinkle with 2 tablespoons sugar. Bake at 350 degrees for 10 minutes or until golden brown. Let cool.

GLAZE:

1 1/2 c. sugar
4 tbsp. cornstarch
Dash of salt
1/2 tbsp. orange juice
4 tbsp. lemon juice
1/2 c. water

Mix ingredients for glaze in order listed. Cook in saucepan on medium heat until thickened to medium consistency. Cream together 3/4 cup sugar, vanilla and cream cheese. Spread cream cheese mixture on top of the cooled cookie dough, stopping 1 inch from the edge of the dough. Garnish with your choice of fresh fruits, arranging the chunks, slices and whole berries in a pattern that pleases you. Spoon on prepared glaze (lemon juice in glaze keeps fruit from darkening). this dessert can be made one day before serving. Yields approximately 12 servings.
