CUBED STEAK ITALIANO 
4 beef cubed steaks
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. cooking oil
1 c. tomato juice
1/4 tsp. garlic powder
1 tsp. dried oregano
3 sm. zucchini, cut into julienne strips
1 c. sliced mushrooms
2 tbsp. grated Parmesan cheese

Combine flour, salt and pepper; dredge steaks and brown in oil in large frying pan to desired doneness. Pour off drippings. Combine tomato juice, garlic powder, and oregano; pour over steaks. Place zucchini and mushrooms over steaks. Cover tightly and cook slowly 20 minutes. Sprinkle cheese over before serving.

Makes 4 servings.
