CUBED STEAK PARMESAN 
1 egg
1/4 c. finely crushed Saltines
5 beef cubed steaks, about 4 oz. each
2 tbsp. cooking oil
1 (8 oz.) can pizza sauce
Dash of pepper
1/4 c. grated Parmesan

Beat together egg, pepper and 1 tablespoon water. Combine crumbs and 2 tablespoons of Parmesan cheese. Dip steaks in egg mixture then in crumbs. In skillet brown steaks in hot oil. Drain fat. Pour in pizza sauce. Cover; reduce heat. Simmer 20 minutes; add a little water to keep sauce from sticking if necessary. Sprinkle remaining cheese on top. Yields 5 servings.
