COCONUT MACAROON 
1 1/4 c. sugar
2 eggs
1/2 tsp. salt
1/2 c. soft butter
1/4 c. flour
1/2 c. milk
1 1/2 c. shredded coconut
9" pie shell

Beat sugar, eggs and salt until mixture is brown colored. Add butter and flour; blend well. Add milk and fold in coconuts (1 cup). Pour into pie shell, top with remaining coconut. Bake in slow oven for about 60 minutes on 325 degrees.
