FRIJOLES A LA CHARRA 
1 lb. pinto beans
4 qts. water
2 lg. cloves garlic, minced
1 lg. onion, chopped
1/2 lb. ham hocks or cubed salt pork (as much as desired)
1/4 c. bacon drippings
1 tomato, chopped
Salt, to taste
Handful of cilantro (coriander)

Clean dry pinto beans, removing broken and wrinkled ones. Rinse well in cold water. Place in large cook pot. Add all other ingredients except salt and cilantro. Cover and simmer until beans are soft, about 3 to 4 hours. Add salt and cilantro. Simmer for a few more minutes.
