SHRIMP FRIED RICE 
1/2 lb. bacon, cut in sm. pieces
2 tbsp. oil
3 garlic cloves, minced
3 med. onions, minced
1/2 green pepper, cut in strips
1 1/2 lbs. peeled raw shrimp
3 c. cooked rice
4 eggs
1/4 c. soy sauce

Heat the oil in a heavy skillet and add the bacon pieces and let brown. Add garlic and onion and cook 2 minutes. Add shrimp and, as soon as they have turned pink, add the rice. Stir in the eggs, whipping with a light movement so that the eggs are thoroughly blended. Finally, add the soy sauce and serve.
