FRIED RICE 
EGGS:

3 eggs
Dash of salt

Beat eggs with a dash of salt. Heat 2 tablespoons oil or bacon fat in skillet and make a thin omelette. Remove to cutting board and shred.

RICE MIXTURE:

6 c. boiled rice (2 c. raw) hot or cold
2 tbsp. soy sauce (optional)
1 tsp. Accent
Dash pepper

Add 2 tablespoons oil or bacon fat to skillet. Add rice mixture and stir for a few minutes; remove.

SHRIMP MIXTURE:

1 c. raw shelled and deveined shrimp in large pieces
1 tsp. cornstarch
2 tsp. wine
Dash of salt

Add 4 tablespoons oil or bacon fat. When hot, add shrimp mixture. Fry 3-5 minutes until shrimp turn pink.

MEAT AND VEGETABLE MIXTURE:

1 c. diced boiled ham
1/4 c. green onion, diced
2 tbsp. carrots, chopped fine
2 tbsp. frozen peas

When shrimp has turned pink, add meat and vegetables; fry for a few minutes, then add shredded egg and rice. Mix well and serve hot.

FRIED RICE VARIATIONS:

Proceed as above substituting other cooked, canned, or fresh shredded meats or shellfish in same quantity as above. Cooked pork, beef, chicken, barbecue pork, or crab are all good. Don't use beef and ham together.
