SWEET POTATO CAKE 
1 1/2 c. cooking oil
4 eggs, separated
2 1/2 c. all-purpose flour
1/4 tsp. salt
1 tsp. nutmeg
1 c. chopped nuts
1 tsp. vanilla
2 c. sugar
4 tbsp. hot water
2 tsp. baking powder
1 tsp. cinnamon
1 1/2 c. raw sweet potatoes, grated

Blend oil, sugar, beat until smooth, add egg yolks, beat and add hot water then dry ingredients. Add potatoes, nuts and vanilla. Beat well then add 4 stiff beaten egg whites and blend. Bake in 3 layer cake pans at 350 degrees for 30 minutes. Cool and frost.

FROSTING:

1 lg. can Pet milk
1 c. sugar
1 stick butter
3 egg yolks
1 tsp. vanilla
1 1/3 c. coconut

Cook over medium heat 12 minutes, stirring constantly. Remove from heat, beat until cool then use between layers, on top and sides.
