EMILY'S FAT FREE MUFFINS 
FIRST MIXTURE:

3 c. oats "quick"
1/2 c. oat bran
1 c. whole wheat flour
2 tsp. cinnamon
1 1/4 tsp. baking powder
1 tsp. baking soda
1 c. raisins

SECOND MIXTURE:

1/2 to 1 c. dark brown sugar
2 c. applesauce then 2 more c. of any combination:
2 more c. applesauce
or 1 c. apple juice
1 c. milk
or 1 c. nonfat yogurt
1 c. apple juice
1/4 c. molasses, optional

Mix first mixture together. Mix second mixture together. Then combine the two together. Spray tins. Bake at 400 degrees for 20 minutes. 12 regular size or 24 small size muffins, but you must "stuff" them and pile up each muffin high. Store in ziplock to keep moist.

No fat (other than what's in ingredients naturally), no egg, no milk (if you wish or have a problem). High fiber. A complete meal.
