OAT BRAN MUFFINS (Sugar - Free) 
1 c. flour
1 c. oat bran
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. mixed spices (cinnamon, allspice)
1 (12 oz.) can juice concentrate (apple, apple-pear)
2 eggs or egg substitute
1/2 c. oil
3/4 c. powdered milk
1/2 c. fructose (or sugar sub. if desired)
1 c. dried fruit (raisins or apples)

Mix dry ingredients. Beat eggs, oil and juice. Mix all ingredients together. Add water for desired consistency. Spray muffin tins with vegetable spray. Fill muffin tins 2/3 full. Bake 16-20 minutes at 400 degrees. Yield about 18 muffins.

Variations: Substitute 1/2 cup chopped nuts for 1/2 cup dried fruit.

Thin batter with water or milk to make delicious waffles.
