SUGAR-FREE OAT BRAN MUFFINS 
1 1/2 c. oat bran
3/4 c. whole-wheat flour
8 pkg. Sweet 'N Low or 1/2 c. sugar
3 tsp. baking powder
2 tsp. cinnamon
1/2 c. chopped nuts
1 egg
1 c. applesauce
1 c. milk

Mix first 6 ingredients together and set aside. Mix egg, applesauce and milk with whisk. Add dry ingredients using whip. You may add anything else you like.

Bake in muffin pan for 20 to 25 minutes in 350°F oven. You can also add raisins, dates, carrots and bananas.
