CHEESE PUFF 
1 c. butter
1/2 c. sugar
4 eggs
1 1/2 c. milk
2 tsp. baking powder
1 1/2 c. flour
Pinch of salt

FILLING:

2 lb. ricotta cheese
4 tbsp. butter, melted
2 eggs
2 tbsp. sugar
Pinch of salt

Cream butter and sugar. Add eggs, one at a time. Blend in milk. Mix baking powder, flour and salt together; add to egg mixture. (This will be very sloppy looking - don't worry, it's okay!) Mix all of the filling ingredients together; set aside.

Spread half of the batter in a greased 9 x 13 inch baking pan. Carefully spoon and spread the filling over the batter and top with remaining batter. Cover and refrigerate overnight. Uncover and bake at 350 degrees for 45 minutes or until golden. Cut into squares to serve. May be served with sour cream and jelly or jam. Makes 18 servings.
