ZUCCHINI COFFEE CAKE 
3 cups flour
1-1/2 cups sugar
1 tsp cinnamon
1 tsp salt
1 tsp baking powder
3/4 tsp baking soda
3 eggs
1 cup oil
1 cup drained, crushed pineapple
2 cups unpeeled zucchini, shredded
1 cup chopped nuts
1 cup raisins

Mix dry ingredients. Beat eggs and oil; add pineapple and shredded zucchini. Stir in dry ingredients until moistened. Turn into 9 x 13 x 2-inch pan. Sprinkle topping.

Bake at 350 for 45 minutes to one hour.

Topping:

1 cup flour
1/4 cup sugar
1 tsp cinnamon
6 tbsp butter

Mix until crumbly.
