SPINACH BALLS | |
10 oz. spinach (frozen box that has been thawed and squeezed out) 2 eggs 1 1/2 c. bread, cubed 1/4 c. shredded cheddar 1 c. grated Parmesan 1/8 tsp. garlic powder 1 tsp. Italian seasoning 3 tbsp. butter, softened To press water out of spinach, put thawed spinach on paper towels, then place clean dish towel on top and gently press until all excess water is absorbed. Combine everything except spinach. Stir in spinach and roll into balls. (I make balls in advance and freeze until party day.) Spray cookie sheet with Pam. Bake balls at 350 degrees for 5 minutes. Then broil until brown, 2-3 minutes. When preparing for a large family party, it's nice to have a great variety of dishes for the wide range of tastes. These spinach balls appealed to both my Greek husband, who grew up on spinach dishes, and my Irish family, which loves pick-up foods. |
