WESTPORT SHRIMP 
1/2 c. butter
2 c. whipping cream
2 tbsp. cornstarch
1 tsp. curry powder
3 oz. sherry
3 c. cooked med. shrimp or 5 c. cooked chicken
2 c. cooked rice
1/2 to 3/4 c. raisins, optional
Garlic salt and lemon pepper to taste
3/4 c. grated Swiss cheese

Preheat oven to 325 degrees. Grease a 3 quart casserole. In saucepan bring butter and cream to boil. Reduce heat. Mix cornstarch and curry with the sherry and add to the cream. Cook until thickened, stirring constantly. Add shrimp or chicken to rice and optional raisins. Blend in seasonings and pour mixture into casserole. Sprinkle cheese over the top and bake uncovered for 30 minutes or until cheese is melted and slightly browned.
