CHOCOLATE ZUCCHINI CAKE 
4 eggs
2 c. shredded zucchini including peeling
3/4 c. oil
1 tsp. vanilla
1 (4 1/2 oz.) instant chocolate pudding
1 1/2 tsp. instant decaffeinated coffee
1 pkg. chocolate cake mix (German chocolate mix)

Beat eggs, zucchini, vanilla, chocolate pudding. Add coffee, cake mix (dry out of the box) and beat at low speed until moist, about 11 minutes.

Bake in Bundt pan about 1 hour at 350°F, or in a 9x13 pan 40-45 minutes or until cake tests done.

Vanilla frosting makes an excellent topping for this cake.

I tasted the cake. I loved it. I agree it's a GREAT cake & the best chocolate cake I've ever made. I said Wow! by my self! It's very moist, soft, & delicious. Now I add some advise for bake dummies like myself: when you mix, don't set your timer 11 min. just see the dough is not powdery and the dough is very thick. I think I beat about 3 min. Am I right? Thanks for the recipe.

I may not have a common sense, I want to know when I add 3/4 cup of oil. I put the oil after the vanilla, it rase big! I didn't taste it yet, but it was success.

This is a GREAT cake. I skipped the coffee. Everyone says this is the best chocolate cake I've ever made, and everyone can't be wrong! It's so easy, it must be sinful. Tell people it's an old family secret recipe and you can't tell them what's in it. (I just chopped the zucchini up into small pieces in the food processor.)

The pudding is added to the recipe right out of the box as an ingredient and is not mixed first.
