SOUR CREAM POTATO SOUP 
2 c. diced potatoes
1/4 c. chopped celery
1 sm. onion, sliced
1 1/2 c. water
1 chicken bouillon cube
2 c. sour cream or lowfat plain yogurt
Salt & pepper
Minced parsley

1) Combine potatoes, celery, onion and water, cook for 20 minutes; add chicken bouillon cub and sour cream.

2) Simmer five minutes, but do not boil. Season with salt and pepper, garnish with parsley. Serves 6
