HAWAIIAN ZUCCHINI BREAD 
4 eggs
1 1/2 c. brown sugar, packed
3/4 c. vegetable oil
3 c. flour
1 1/2 tsp. baking soda
3/4 tsp. baking powder
3/4 tsp. salt
2 c. grated zucchini
1 c. chopped walnuts
1 c. coconut
1 c. well drained crushed pineapple
1/2 tsp. coconut extract
1 tsp. vanilla

Beat eggs and gradually beat in sugar, then add oil. Combine all dry ingredients. Add to egg mixture alternately with zucchini. Stir in remaining ingredients. Turn into greased and floured 9 inch or two loaf pans. Bake at 350 degrees for 50 minutes.
