SLICED BEEF WITH CURRY SAUCE | |
1/2 lb. beef (flank steak) TO MARINATE BEEF: 1 tbsp. soy sauce 1/2 tbsp. cornstarch 2 tsp. sugar 1 tbsp. cold water 1 c. diced onions 1 1/2 tbsp. curry powder 1 lb. potatoes 20 slices cooked carrots 2 c. cold water 1 1/2 tsp. salt 1. Cut beef into 1 inch square thin slices. Put in bowl and marinate with soy sauce, cornstarch, sugar and cold water for 1/2 hour. Add 1 tablespoon of oil and mix well. 2. Slice potatoes into diagonal pieces. 3. Heat 3 tablespoons of oil. Stir fry onions. Add curry powder, then carrots and potatoes. Stir fry 1/2 minute. Add 2 cups cold water. Season with salt and sugar. Cover pan and reduce the heat to low and cook about 10 minutes. 4. Place beef slices on top of other ingredients. Cover and cook over high heat again for 10 seconds. Add 2 tablespoons of hot oil. Turn off the heat and pour on a platter. |
