BLACK BEAN, CHEESE, AND TOMATO
FAJITAS
 
1 onion, chopped
1 (15 oz.) can diced tomatoes with Italian seasoning (Hunts)
1 (15 oz.) can black beans
2-3 cups Pepper Jack cheese (or some mix of Pepper Jack and Cheddar cheese)
1 tbsp. chili powder
1/4 tsp. red pepper flakes
a few pinches of salt
a pinch of black pepper
olive oil
wheat tortillas

Chop the onion into small pieces.

Cook the onion until soft and browned with a dash of olive oil. Add the can of diced tomatoes and beans. Cook on high. Add 1 teaspoon chili powder and 1/4 teaspoon red pepper flakes. Season with salt and pepper.

Spoon the black beans and tomatoes into the wheat tortilla. Then add a handful of Pepper Jack cheese.

Bake in the oven at 350°F for about 15 minutes or until the shell is hard and the cheese is melted.

I made this recipe tonight and it was AMAZING. I love all the flavors that come together in this dish. The chili powder gives it a nice kick, but not too much where you can't taste the other ingredients. It's very easy to make and very filling.
