DATE NUT CAKE SUPREME | |
2 c. chopped dates 2 tsp. baking soda 2 c. boiling water 1 c. butter (2 cubes) 2 c. sugar 2 eggs 1 tsp. vanilla 3 1/2 c. sifted flour 1/2 tsp. salt 1 c. chopped walnuts Sprinkle soda over dates. Add water and set aside to cool. Cream butter, add sugar gradually, add eggs, date mixture and vanilla. Add flour and salt gradually. Stir in walnuts. Pour into greased angel food cake pan or 2 loaf pans. BAKE ON LOWEST OVEN SHELF. Bake 1 hour or until top is firm in 350 degree oven. REMOVE WHEN COMPLETELY COOL. WHIPPED CREAM FROSTING FOR 1 LAYER CAKE: Soften 1/2 teaspoon unflavored gelatin in cold water. Combine 1/2 cup whipping cream, 1/4 cup vanilla and 3 tablespoons powdered sugar. Beat until spreading consistency. |
