ZUCCHINI CASSEROLE 
3 med. zucchini, cubed
1 can cheddar cheese soup
8 oz. sour cream
2 eggs
1 pkg. stuffing mix
1 can French fried onion rings
1/4 lb. butter (use half in mix)

Mix soup, sour cream, eggs and half of butter and seasoning mix from stuffing together. Add zucchini and set aside.

In greased casserole add half of stuffing (bread). Then pour zucchini mixture over stuffing. Add the other half of the stuffing and remaining butter.

Cook for 45 minutes in 350 degree oven. Place can of onion rings on top of casserole the last 10 minutes to heat.
