CREOLE SOUP 
1/2 c. butter
2 med. chopped onions
2 med. chopped green peppers
1 lg. sweet red pepper, diced
5 c. beef or chicken stock
1 tsp. black pepper
1 tsp. white pepper
1 tsp. salt
1 tsp. sweet basil
1 tsp. crumbled bay leaves
2 med. tomatoes, diced
1/2 c. tomato paste
1 chopped celery stalk
8 oz. spaghetti

Over medium heat, saute vegetables in butter 9 minutes. Season with spices, add stock, stir; add tomato paste. Simmer 30 minutes, stirring occasionally; add spaghetti. Remove from heat when spaghetti is done. Let rest 15 minutes. Warm to serve.
