CREAMY PIMIENTO CHEESE | |
1 (8 oz.) pkg. cream cheese, softened 2 c. (8 oz.) shredded sharp cheddar cheese, softened 1/4 c. plus 2 tbsp. mayonnaise Dash of garlic powder 1 (4 oz.) jar diced pimento, drained Combine cheeses in a large mixing bowl; beat at medium speed of an electric mixer until light and fluffy. Add mayonnaise and garlic powder; mix well. Stir in pimento. For best consistency, serve at room temperature. To store, cover and chill. Yield: 4 1/2 cups. |
