TABBOULEH 
2 c. boiling water
2 c. cracked wheat or fine bulgar
3 med. tomatoes, chopped
1 med. cucumber, diced (1 c.)
1 c. finely chopped, fresh parsley
1/2 c. finely chopped green onions
1 tbsp. dried mint leaves (if available)
1/2 c. lemon juice
1/2 c. olive oil
1 tsp. salt

In large bowl, pour boiling water over bulgar. Let stand for one hour or until fluffy. Drain well; return to bowl. Add remaining ingredients - mix well. Cover and refrigerate to blend flavors.
