COMPANY CHOWDER | |
3 potatoes, dice sm. 2 chicken breasts 1 clove garlic, minced 1/2 sm.-med. onion 2 tbsp. oil or butter 1 bell pepper, cut sm. 1 can whole kernel corn 1 can chicken broth 3 c. water 2 c. milk, approx. 1 c. Jack cheese, shredded 1/4 c. green onion, cut sm. 1/2 tsp. each cumin and oregano Salt, pepper to taste Bone, skin chicken and cut small. Prepare all veggies. Heat oil in large pot. Saute potatoes first. Then add chicken, onion, pepper, garlic and seasonings. Continue to saute until chicken and veggies are almost done. Add some of the water if necessary. Add corn and broth and the rest of water. Cook until done. Add green onion and Jack cheese. Stir on low just until cheese is melted. Add milk as desired to desired consistency. Serve hot. |
