SHEPHERDS PIE (BRITISH) 
Before we start, let us be clear and lets get it right. Shepherds pie is made with lamb, cottage pie is made with beef. Never in the history of the British isles has cheese ever come close to either. If you see cheese anywhere near a recipe for either, put it down to the USA's obsession to add cheese to anything that moves - it doesn't generally belong with meat unless you desire lead in your stomach, this said.

1 lb. lean lamb, minced
1 large onion, sliced
1 medium carrot, chopped
1 stick celery, chopped
enough beef stock to cover
salt and pepper
3 to 4 tsp. corn starch or 2 Bisto (if you know what it is) and 1 corn starch
2 lb. good mashing potatoes
4 oz. (1 stick) butter
salt and pepper

Let's get this right and the best way: Add minced lamb into a casserole dish, add onion, carrot, celery, beef stock, corn starch and/Bisto/corn starch, salt and pepper, to taste, and stir.

Cook in a slow oven, say 275°F for 2 hours. You can do all this on stove top for about 20 minutes BUT the flavor is never the same.

When complete, drain off gravy and reserve.

Boil and mash potatoes with milk, butter, salt and pepper, however DO NOT make it into a wet paste. It should be firm and almost chunky.

Add back enough gravy to the meat to make it moist. Gently add the potato to the top and build up. Spread with a fork, finally making fork marks both up and down and across to form a basket like pattern.

Put oven temperature at 400°F, then bake until potato is crispy and golden on the peaks (about) 30 minutes.

Serve with remaining gravy and steamed cabbage (preferably Savoy, if you can get it). NO CHEESE, PLEASE.

I am very pleased with Neil's offering of an authentic cottage pie. To me it was not rude but a very intense rendering of something he obviously loves and if made as he directs most others would agree. Definitely agree about the cheese also. True, over the years we have had a dish that has been named Shepherd's pie most likely just lacking a name for our own.. Hey, if the family eats it, don't define it. But BOY is THIS recipe going to be GOOD !!!!

Absurd, this was neither rude or snobbish. I expect if a Brit put up an apple pie recipe, the same would happen. Get over it, don't tell people how to eat, or cook, or convey a recipe, and if you dislike a recipe out of the way it is written, and not for it's taste, don't add comments.

Gee, I just wanted to know if I could freeze instant potatoes on top of my shepherd's pie. Made w/ hamburger, veggies and gravy. And it's yummy and I put cheddar on top of the potatoes. BISTO - a gravy thickener available here in Canada - grew up with it and my Mom was American. Go figure, we all check recipes and then do our own thing.

I made the recipe as she published it and it was delicious. No cheese added, however, I am a US citizen and love my cheese, but it is made in other countries that must love it too. Just enjoy the food everyone, it was great.

Hey all I got a laugh out of the comments my fiance is american and yes is a cheese freak and has to have cheese on everything especially his fries. I am australian and my foster mother used to make this for me when I was a teenager and I love it the only thing is as my late future mother in law would say DONT SKIMP ON THE INGREDIENTS - the more stuff you put in it the better the taste.

And you aren't in the least bit rude or snobbish. Ignore the clueless, thin-skinned, petty, belligerent, smug, (and most probably obese) low-brows in here! As someone said, their attitude must be due to all that gorging on cheese.

I am one of those who wants to know the authentic, original recipe. I do NOT want to know the adulterated, hashed, unrecognisable, Americanised version of any dish. Especially not when they still call it by the classical name, which just shows their ignorance. I am sick of that stuff.

I just need to know if anyone tried Neils rendition of Shepards Pie and how it tasted. I think I saw one person who said they liked it..but I had to read a lot of "comments" on what other people were saying about "being rude or not being rude" to cheese or not to cheese..Is there anyone else out there who likes Neils rendition. I want to try this, but Im reluctant because I don't see any real feedback...Have to seen the price of Lamb lately?! Too expensive to do when all I see is one feedback.
