CAPIROTADA 
6-8 slices toasted French bread
1 1/2 c. brown sugar or piloncillo
1/2 c. raisins
1 1/2 c. water
1 c. chopped nuts
1 stick cinnamon
Slices of yellow or Jack cheese
Colaciones

Grease a square cake pan. Break bread into 2 inch pieces. Place one layer in pan. Sprinkle raisins and nuts over bread, add slices of cheese. Repeat the same procedure with another layer of bread. Dot top of mixture with colaciones.

Make a syrup of the water, sugar and cinnamon. Heat to dissolve sugar. Pour half over bread. Bake at 325 degrees for 10 minutes. Remove from oven, pour remaining syrup on bread. Bake for another 15 minutes.
