TOMATO - ONION - CHEESE BAKE 
3 c. thinly sliced onions
1 c. fresh bread crumbs
1 tsp. salt
Freshly ground black pepper
4 lg. ripe tomatoes, peeled & sliced
3 tbsp. chopped fresh chives
1 1/2 c. grated sharp cheddar cheese
3 tbsp. butter, melted

Stir together bread crumbs, 1 teaspoon salt and pepper to taste. Layer half the tomato slices in a lightly buttered 2 quart casserole dish. Top with half of the onions, half of the bread crumbs, half of the chives and cheese. Season with salt and pepper. Repeat the layers ending with the remaining cheese.

Drizzle with melted butter. Bake uncovered in a preheated oven at 375 degrees about 45 minutes or until the cheese is golden brown and bubbling.
