V.'S POTATOES 
3 med. potatoes, cooked and mashed
1/4 c. grated Parmesan cheese
1/2 of a 3 oz. pkg. cream cheese
1 tbsp. macaroni
1 tbsp. chopped green onion (optional)
1/2 single serving env. Lipton's Onion Soup Mix
Milk
1 beaten egg (or 2 egg whites)
1 1/2 c. coarsely crushed corn flakes

Combine mashed potatoes, cheese, butter, onion and onion soup mix. Mix well. Shape into 8 balls. Dip in beaten egg and roll in corn flakes. Place on greased baking sheet; bake at 400 degrees for 10-15 minutes or until hot and crisp. Makes 4 servings. (I triple this recipe and freeze on baking sheet before baking. Just thaw and bake!)
