LENTEN VEGETABLE DISH 
2 onions, chopped
1/2 c. celery, chopped
1 med. can tomatoes
2 tbsp. ketchup
1 pkg. frozen French style green beans
1 pkg. frozen lima beans
1 pkg. frozen peas
2 tbsp. mint leaves
2 tbsp. dill weed
3 tbsp. parsley
1 tsp. salt
1/4 tsp. pepper

Fry onions and celery in 2 tablespoons olive oil until tender. Add tomatoes, ketchup, mint, dill parsley, salt, and pepper; simmer a few minutes. Add the frozen vegetables and stir to separate. Cover and simmer 45 minutes.
