RUNNIN' BEAR SALOON SQUIRREL STEW | |
Squirrel(s) should be cleaned and dressed, salt and peppered to taste. Boil squirrel in water until very, very tender. Take about 1/2 cup of the liquid the squirrel was cooked in and make some dumplings. DUMPLINGS: Sift: 1 c. flour 1/2 tsp. salt 1 1/2 tsp. baking powder Add: 1/2 c. milk 2 tbsp. melted butter Make a soft dough with the above ingredients. Put deboned squirrel back into the pot with the liquid. Drop the uncooked dumpling' dough into the pot - as the squirrel is cooking. Cook uncovered about 10 minutes, on medium-low heat. Cover and cook on simmer about 10 minutes, or until done. Dad, Ren Berra owned the Runnin' Bear Saloon in Herrin, Illinois. |
