BANANA CUSTARD PUDDING 
3/4 c. sugar
1 tbsp. flour
1/4 tsp. salt
2 c. milk
3 eggs, separated
1 tsp. vanilla
Vanilla wafers
5-6 bananas

Combine 1/2 cup sugar, flour and salt in top of double boiler. Stir in the milk. Cook over hot water, stirring constantly until thickened. Cook 15 minutes longer, stirring occasionally. Beat egg yolks, stir a little of the hot mixture into yolks. Then stir yolks into rest of mixture in double boiler. Cook 5 minutes, stirring constantly. Remove from hot water and add vanilla.

Line a 1 1/2 quart casserole with vanilla wafers. Top with sliced bananas. Pour some of the custard over bananas. Continue layers of wafers, bananas and custard, ending with custard on top.

Beat egg whites stiff. Add remaining 1/4 cup sugar gradually and continue beating until whites form stiff peaks. Put on top of pudding in casserole. Bake in preheated oven at 425 degrees for 6-8 minutes or until meringue is browned.
