CHEWY OATMEAL COOKIES 
1 1/4 c. butter
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
3 c. oatmeal
1 c. raisins

Heat oven to 375 degrees. Mix sugars together; add butter and beat until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, and cinnamon. Whisk to thoroughly mix ingredients. Add dry ingredients to butter mixture and blend well. Stir in oatmeal and raisins. Drop by rounded teaspoonfuls on ungreased cookie sheet. Bake 8 to 9 minutes.
