COUNTRY APPLE CAKE 
1 c. vegetable oil
2 c. white sugar
3 eggs
2 c. flour
1 tsp. baking soda
3 c. peeled apples
1 c. walnuts
2 tsp. vanilla
1 tsp. salt

Combine oil, sugar, eggs, and vanilla in a large bowl and mix with an electric mixer for 5 minutes. Stir in salt, flour, and soda. Add chopped apple. Stir in the apple and nuts by hand. Bake in 9 x 13 inch pan at 350 degrees for 1 hour. Serve with whipped topping.
