SCALLOP CASSEROLE 
1-2 lbs. fresh scallops
1/2 c. butter, melted
1 c. crushed Ritz crackers
1/4 c. Parmesan cheese
Pepper
Parsley
Milk

Soa k scallops in milk. Mix melted butter, cracker crumbs, cheese, sprinkle pepper. In casserole dish place scallops, squeezing excess milk out of them.

Melt 1/4 cup butter; pour over scallops. Spread stuffing over scallops, sprinkle parsley. Place uncovered in oven at 350 degrees for 1 hour.
