SOUTHERN STYLE BANANA PUDDING 
Vanilla wafers
3-4 ripe bananas

CUSTARD:

3/4 c. sugar
2 1/2 c. milk
3 egg yolks (use whites for meringue)
1/4 c. flour
1 tsp. vanilla

Beat egg yolks, add sugar, milk, flour, vanilla, a pinch of salt and cook over low heat until thickened.

Line casserole dish with vanilla wafers, topped with sliced bananas. Cover this with custard. Make another layer and top with custard. Top with meringue and bake at 350 degrees for 5 to 10 minutes.

MERINGUE:

3 egg whites
6 tbsp. sugar
1/4 tsp. cream of tartar

Whip until very fluffy and dry. Arrange on pudding and bake.
