SOUTHERN BANANA PUDDING | |
1 sm. Jello vanilla pudding & pie filling 2 lg. sliced bananas 2 slightly beaten egg yolks 25 vanilla wafers 2 1/2 c. milk 2 egg whites 1/4 c. sugar Dash of salt Combine pudding mix, egg yolks and milk in saucepan. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Arrange layer of wafers on bottom and sides of a 1 1/2 quart baking dish. Add layer of bananas and layer of pudding. Repeat layers. Beat egg whites with salt, until foamy throughout. Gradually beat in sugar and continue beating until mixture will form stiff shiny peaks. Pile lightly on pudding, sealing edges well. Bake at 425 degrees for 5 to 10 minutes, or until lightly browned. Serve warm or chilled. Garnish with additional banana slices, if desired. Serves 8. |
