SOUTHERN BANANA PUDDING 
1 pkg. (reg.) Jello vanilla flavor pudding
2 egg yolks, slightly beaten
2 1/2 c. milk
25 vanilla wafers
2 lg. bananas, sliced

Combine pudding mix, egg yolks and milk in saucepan. Cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Arrange layer of vanilla wafers on bottom and sides of a 1 1/2 quart baking dish. Add a layer of banana slices and of pudding. Continue layering, wafers, banana and pudding, ending with pudding. Top with meringue, recipe below.

MERINGUE:

Beat 2 egg whites and a dash of salt until foamy. Slowly add 1/4 cup sugar, beating constantly until stiff shiny peaks form. Pile onto pudding, seal edges; bake 5 to 10 minutes at 425 degrees, until lightly browned. Arrange more banana slices around edge just before serving. Serve warm or chilled. Serves 8.
