SOUTHERN STYLE BANANA PUDDING 
1 pkg. vanilla or banana pudding mix (reg. or instant)
2 c. skim milk
32 vanilla wafers
3 bananas, sliced
3 egg whites, at room temp.
1/2 tsp. vanilla
1/8 tsp. cream of tartar
1/4 c. sugar

Preheat oven to 350 degrees. Prepare pudding mix as directed, substituting skim milk for whole milk.

Arrange half of cookies in bottom of 8 x 8 x 2 inch square baking dish; top with 1/2 of bananas then half of pudding. Repeat with remaining cookies, bananas and pudding.

Beat whites, vanilla and cream of tartar in medium size bowl at high speed until soft peaks form. Spread evenly over pudding until edges are sealed. Bake at 350 degrees for 10 to 15 minutes until golden brown.
