CREAMED BRUSSELS SPROUTS (WITH
CHEESE)
 
1 1/2 lbs. Brussels sprouts

Remove any discolored leaves. Cut off stem ends, and wash thoroughly.

Heat 1" salted water (1/2 teaspoon salt to 1 cup water) to boiling. Add brussels sprouts. Cover and heat to boiling. Cook 8 to 10 minutes or until tender. Drain.

WHITE SAUCE:

2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
3 slices cheese, diced

Melt butter in saucepan over low heat. Blend in flour, salt, and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Add cheese, stir until cheese is melted. (Swiss cheese is great!)
