DIABETIC COOKIES 
1 3/4 c. water
2 c. raisins
1/4 tsp. nutmeg
2 tsp. cinnamon
1/3 c. salad oil
1 tsp. baking soda
2 tbsp. very warm water
2 eggs
2 1/4 c. flour
1 tsp. baking powder
4 pkgs. Equal or 8 saccharin tablets
1 c. nut meats

Boil first 4 ingredients for 6 minutes and cool. Add salad oil. Dissolve soda in warm water. Beat eggs. Sift flour, baking powder, and Equal or saccharin (dissolve saccharin in 1 tablespoon water). To dry ingredients, add cooked and cooled raisins and salad oil, beaten eggs and 1/2 of nut meats. When well blended, dip by teaspoonful onto oiled cookie sheet. Put few nuts on top of each cookie. Bake at 375 degrees for 10 to 12 minutes. Makes 4 dozen.
