DIABETIC COOKIES 
3 1/4 c. shortening
1 egg
1 tsp. vanilla
2 c. mashed bananas
1/2 c. boiling water
1/2 c. raisins
1 c. flour
1 tbsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
3/4 c. quick oats
1/2 c. chopped dates
1/2 c. nuts (optional)

Mix first 4 ingredients. Add boiling water and raisins; then add rest of dry ingredients. Mix - drop by teaspoonfuls on ungreased cookie sheet. Bake 8 to 10 minutes at 350 degrees.
