GREEN CHILE BURROS | |
4 lb. cooked port roast, chicken or beef 1 tsp. chili powder or more to taste 2 sm. cans green chilies, seeded & chopped 1 lg. onion, chopped 2 cloves garlic, chopped 1/2 tsp. oregano 2 c. beef broth 2 cans tomatoes 1 can tomato paste 36 lg. flour tortillas Combine all ingredients except tortillas and simmer until mixture thickens. Combine 1/4 cup flour with some of juice and add gradually until quite thick. Eat on heated tortillas rolled like a sandwich. Can place ingredients in a cooking bag with meat uncooked. Cook approximately 2-3 hours until tender at 325 degrees; then thicken with flour paste. Serves 12. |
