GREEN CHILE PIE 
1 lb. Colby cheese
2 cans cream of chicken soup
16 oz. sour cream
8 oz. diced green chiles
2 pkgs. taco seasoning mix
2 lbs. ground beef
1 lg. onion, diced
1 pkg. corn tortillas

Cut tortillas into bite-size pieces. Brown meat and onions and drain. Add taco seasoning. Mix per instructions on package. Heat soup to boiling. Add chiles. Stir in sour cream. Mix well.

Spread about 1/4 soup mixture in bottom of 9x13 inch pan. Put half of tortillas on top of soup. Pour all of meat mixture on this. Spread half of cheese on top of meat. Put remaining tortillas on top of cheese. Pour remaining soup mixture on tortillas. Top with remaining cheese. Heat at 325 degrees until bubbly.

NOTE: To make this spicier, sprinkle chopped green onions and jalapeno peppers on top of cheese before putting the pie in the oven.
