LEMON BUTTER 
3 eggs
3 lemons - juice
Grated rind of 2 lemons
1 1/2 c. sugar
3 heaping tbsp. cornstarch
2 c. boiling water
2 tbsp. butter

Beat eggs. Add lemon juice and rind. Add sugar - make thickening with cornstarch and a little water. Add other ingredients and boiling water. Bring to boil - remove from burner when thick - add butter. Makes 1 quart. Can be made in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
