STIR AND DROP SUGAR COOKIES 
2 eggs
2/3 c. vegetable oil
2 tsp. vanilla
1 tsp. grated lemon rind
3/4 c. sugar
2 c. flour, sifted
2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 400 degrees. Beat eggs with fork. Stir in oil, vanilla and rind. Blend in sugar until mixture thickens. Add flour, baking powder and salt. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheet. Flatten with greased bottom of a small glass dipped in sugar. Bake 8 to 10 minutes. Makes 3 dozen cookies.

this recipe is the best sugar cookie recipe i've ever had. the cookies are so light and fluffy. they are much healthier than any other sugar cookie ive had. there is barely any sugar and its still sweet, but not yucky sweet. who ever created this recipe is a genius
