STUFFED BAKED POTATOES | |
3 med. potatoes (about 1 1/2 lb.) 1/2 c. Pet evaporated milk 3 tbsp. water 1 1/4 tsp. salt 1/8 tsp. pepper 1/4 c. grated process American cheese Preheat oven to 425 degrees (very hot). Wash and grease potatoes. bake 50 minutes, or until soft to the touch. Cut in halves lengthwise, and scoop out the centers. Save 4 half skins. Mash potatoes; and add milk, water, salt and pepper. Beat until light and fluffy. Fill 4 potato skins with potato mixture. If desired, top with cheese. Return to oven and bake 15 minutes. Makes 4 servings. |
