EGGPLANT PARMAZAN 
4 med. eggplant
Lots of bread crumbs, seasoned
3 eggs, beaten
About 3 to 4 c. prepared and seasoned with meat and tomato sauce
1/2 c. Parmesan cheese or Romano cheese
1 lb. Mozzarella cheese, shredded

Cut eggplant about 1/8 inch thick. Dip in beaten egg, then bread crumbs, then place in a dish sprayed with Pam. Put into microwave until soft, about 10 minutes on high (about 1 eggplant at a time).

Then place in long glass dish sprayed with Pam, layer of eggplant, then meat sauce, sprinkle with Parmesan cheese and Mozzarella cheese layer and repeat until a full pan but make sure you have enough sauce to go over top and enough cheese as well. Place in oven at 350 degrees until done, about 45 to 55 minutes. Serve with salad and rolls. Serves about 5-6 people.

Since microwave ovens vary in power, you may need to adjust your cooking time.
